I think your plan to spend an evening in Amsterdam sounds quite doable, but I would like to make a very important suggestion.If the airline recommends arriving 2 hours early for an international flight (which they generally do then arrive at 7:20, not 8:00.I realize that 1:20 minutes is often enough time, but you never know how long the lines will be at the checkin desk and at security.There's also the possibility of an unexpected delay in getting to the airport.Once I was on a train headed to LGW.The train left on time, but upon arrival at LGW the train had to wait 15 minutes for a track to unload, so we were all stuck on a stopped train for 15 minutes.There was a lady on that train that was cutting it very close and I heard her on the phone w/the airline, begging them to wait.I don't know if she made it or not.My point is, you're much better safe than sorry.Allow yourself plenty of time because missing your flight home will be very expensive and inconvenient.They recommend 2 hours for a reason.
OK, I'll get off my soapbox now and try to answer your questions.here is a train directly from the airport into the city.Be sure to stamp your ticket in the machine if that's still required.There are many canal tours at night and they won't be hard to find, but any tourist info desk can help.It was too many years ago for me to remember the hotel where I stayed, I hope someone else can help with that.

There are 2 hotels right next to Ams.entral Station under 100 a night.he Ibis and the Botel.'d advise staying at either of them so you dont have far to go in the morning.any of the canal boats are also right next to the station, but I'm not sure if they have tours after 9pm.

yourselves around the central station there are some nuisance
types hanging around, keep a grip on things and be alert but not
alarmed, okay Otherwise it's a hasslefree city.
From the central station try for either of the nearby hotels
suggested, or some other, then take the trams 2, 3 or 5 from
outside the station to Leidseplein and look around.t's a lively
square, see if the Hagendaasz place still has the tables and
chairs for you to lounge and peoplewatch while doing what
comes natural with a Hagendaasz.o the southeast (away from
Stadsschouwburg building are a few streets with oodles of
restaurants, it's a great walk for menustudying or for a late
meal or snack.
After you stroll around for a while, you might want to stop on
the way to the station and check out the Dam, it's the big
peoplegathering square with the Royal Palace, and you can
stroll along the Damrak back to the station, although that's not
the most scenic of streets.
